Salting
This is a key stage that should be as short as possible to ensure that the ham is sweet. It is a totally natural food that does not contain any type of preservatives.


Curing process
It starts immediately after finishing the salting process, and lasts until the piece is ready for consumption. The duration of this period ranges from two and a half to four years.
Although this is the end of the process, Navalpedroche controls the entire production cycle: from the birth of the animal to the consolidation of the finished product.
